A former instructor at the famous Tsuji Culinary Institute and TV personality, Chef Tanaka San has created a seven-course menu that reflects the seasons, and showcases local produce and his modern take on classic Japanese cuisine. Chef Tanaka San's menu constantly evolves as it attempts to celebrate Hokkaido's beautiful, natural produce. The menu is decided each morning after a visit to the local market. The bounty of the day is then presented that evening in the form of creative dishes at your dinner table.

Includes an appetiser of three small bites, a sashimi plate, tempura cooked to order, fish course, mizutaki chicken hotpot prepared for 96 hours, zosui, and dessert to finish. Please note there is no set menu. Kindly advise of any dietary requirements and allergies at the time of reservation.
