Former chef of Niseko’s famous Ichimura Soba Restaurant, Abe San has created a six course menu to showcase his passion for fresh Hokkaido produce and traditional Japanese cuisine.
Abe San’s menu includes a seasonal salad starter course, followed by a beautifully presented sashimi plate created after seeing what is available at market. To follow is houraku yaki, a warming dish of chicken, fish and vegetables cooked in an earthenware pot over hot stones served with miso, sesame ponzu. Abe San will then cook his hand cut soba noodles and serve them alongside hot tentsuyu and tempura cooked to order. A dessert of grapefruit jelly and carrot will finish this delicious course menu.
